    Homage

    The Classic Cut series was launched by Macallan in 2017 and might be considered on homage to the Macallan from an era gone by – before the launch of the Fine Oak when bourbon casks made their introduction here. It’s a yearly returning limited release that matured solely on sherry casks. Sherry seasoned casks, to be clear. It is bottled at cask strength. Mine, from 2019, sports 52.9% ABV.

    The first thing I notice is the oak! Unexpected and not what I was hoping for. But leave it to breathe for five minutes and all is well. More than well, in fact, it turns wonderfully aromatic on fresh figs, strawberries, dates and stewed quince. Give it even more time and it turns a bit candy-like. Red lace candy and fruit roll ups.

    Spicy and mouth coating. Creamy in fact. The taste offers sultanas, red fruit in a stew and loads of spices. Baker’s spices, ginger, nutmeg, cinnamon and even some black pepper.

    In the finish is where this malt shows the most sherry influence. Long, spicy and drying, but leaving you with a sticky mouth full of candied syrup.

    This will set you back some 125 EUR, but it is money well spent. Absolutely great Macallan. The Classic Cut 2020 was just launched, but I had the good fortune of getting hold of this bottle.

    Got this one on the festival in The Hague in a small Macallan tasting. It is definitely not bad, but pricewise it is just to expensive. And again the extreme marketing around this brand is just repulsive.. absolutely not willing to tell me something about age. Instead a lot of marketing jibberjabber..too bad.

      A lot of european oak. Thick full bodied nose. Definitely PX driven. There’s red fruit in your face, plumbs, herbs and sherried oak.
    • Taste
      Immediately the PX sets the tone. A lot of very sweet sultana’s, spiced wood and dark red fruits. Well bodied, thick creamy and sticky.
    • Finish
      This is quite a heavy Sherry finish. Medium to long. It feels like my mouth stays covered in sweet candied syrup.

      Splendid stuff, unfortunately the price is not.

    Appearance: Deep reddish amber. Prettier than the Double or Triple cask.

    Nose: Old basement oak, raisin, wet casks, cherry. Wow.

    Palate: Huge sherry, big raisin, chocolate, caramel, spice.

    Finish: Spicy, sweet, and long.

    With Water: Softer and spicier.

    Overall: A lovely, somewhat old-style Macallan. This is reallygood, unlike the double and triple cask. A real sherry bomb with the correct strength.

      The nose is rather unique with notes of figs and strawberries followed be crab sticks, burnt sugar and dates.

      The taste is beautifully sweet with slight sourness and has notes of baking spices, lots of dried dark fruits and berries.

      The finish is medium to long, quite spicy and oaky with nice sherriness and notes of dates, raisins and milk chocolate.

    It's a really well made sherry malt. With a little patience and air, the nose develops into a very sweet raisin/tobacco combo with an old-school mustiness at the start. The taste then surprises with a very interesting sharp spiciness that stands up to the sweetness. I really like this because the other flavors of the raisins, fruit and wood remain intact. I don't know where this clear chili-like sharpness comes from for a short time. Maybe it's an expression of the unknown age? Because we have a NAS in the glass here, which was certainly not allowed to mature in the barrel for too long, probably much shorter than e.g. the 12y Sherry Oak. And here I come to my real point of criticism, the price you have to pay for this bottling series. Tasty, good malt, really well made. But the price of around €120 to €130 is simply too high for a NAS.

      A bit woody and musty at first, like taking old books out of the wooden cupboard, blowing the dust off and leafing through them. And at the same time, a hint of a scent of raisins and dried plums gently blows in the background. After a few minutes of rest in the glass, the nose opens noticeably. The raisins, which were previously only discreetly in the background, are now clearly in the foreground. Figs and dates pickled in honey, nutmeg and cinnamon, some nutty chocolate. With a longer standing time, additional aromatic scents of red fruits such as dark cherries, some orange zest, pipe tobacco and light floral aromas such as violets are revealed. The alcohol is very harmoniously integrated into the odor spectrum - an unpleasant stinging or something similar. With a drop or two of water, more wood flavors and orange come through. The raisins and sweetness decrease.

      Very creamy mouthfeel. Oh! Interesting! After a short, sweet overture with lots of raisins, a surprising spicy note appears. Lots of ginger, white pepper is surprisingly present and once takes command. After the first sip, the fruity and honey-sweet side stays in the foreground for a little longer until the spiciness takes over again. But he remains balanced within himself. With a little water, the spiciness is significantly reduced, but it also becomes a bit more boring.

      The finish in the mouth is almost something like a little chili catch, very warming on the finish, but still sweet with great associations of raisins, leather and tobacco. Slightly astringent towards the end in the mouth. The oak aromas from the barrel are present. The finish is medium to long.

    To me, this shows Macallan still have some quality control (when they want to, I guess).

      The oak is a bit loud initially, and the impression is rather youthful / punchy, but once it settles down it works perfectly well. Either let it breathe for 20 minutes or add a splash of water and you get the quintessential chocolate-and-spiced-orange vibe that you'd expect from a sherried Mac.

      Simple and straightforward, but tasty. Not too far from what you‘d imagine the 12 y.o. Sherry Oak would taste like at cask strength. A slight burn in the back suggests this might not yet bet in the double digits, age-wise, but that can be remedied by a) smaller sips or b) the addition of water.

      Lots of chocolate, European oak spice and umami (almost a bit salty on the lips), good cask quality.

    Very pleasant (albeit dubbed) and drinkable, well suited for a smoke, so as not to look for "unicorn butts", but just enjoy the cold smoke.

    This is a single malt (no blend, no grain). Although there was a version that this is Balantines 12, for example, but I do not feel the grain here at all. Rather, it's Glenlivet 12 from the 1980s botling.

    Strength: 43%
    There is too much wood in the aroma, taste and aftertaste. Based on this, I conclude that the bottle will indicate Matured in Oak Casks, most likely even with the addition of caramel. In order to say that this is a purely sherry aging, I miss the brighter sherry notes in both aroma and taste.

      N- Tight initially but breath out very well with fragrantly peppers, nutmeg and orange zest. Subdue sweetness compared to 2018 with more menthol, struck matches, herbs and scents of papers. (87/21)

      P- Dry, spicy and chewy. Nutmeg and oak spices, with layer of sourish honey sunk in gently. (87/21)

    The aroma is dense, leather, nuts, dried fruits, later mushrooms, woody notes.
    Taste
    Sweet and sour, with a strong sherry influence. In continuation salt, again leather and sulfur notes.
    Aftertaste
    Dense. Leather, cereals, woody notes.
    Nothing to do with the old sherry style!

    Nose. Felt a high strength and a little sour lime smell. This is also the case for regular episodes of Makalan 12. It seems that the barrels did not have enough time to give their best tones. Definitely, this sour smell from Bourbon barrels, while sherry casks did not have time to give enough sweetness to interrupt this sour taste in both smell and taste. Sweetness breaks through only after and does not correct the existing shortcomings. The aftertaste is quite bright.

    Smell: Dried fruits, raisins, plums and apricots, with a slight sweetness of brown sugar. In the background some mint comes through and a gentle oak note spreads.
    Taste: It starts with a gentle fruit sweetness that comes from dried fruits. The main focus is again on the raisins! Then it becomes more intense, spices spread and bitter orange jam can be tasted. I perceive a subtle herbal note and a little damp wood.
    Finish: Relatively short and somewhat disappointing. It leaves a dry mouth with slightly spicy oak tones. But everything is short-lived.
    Conclusion: A smelling and tasting whisky, only the finish disappointed me a little. I don't want to discuss whether the whisky is now too expensive or not, everyone should decide for themselves.

    Room temperature when drinking: 18 ℃

    Viewing Eyes: Copper Gold

    Smell Nose: Diesel, sulfur. Wake up for 20 minutes, milk buns, caramel, rich wheat flavor, dry baked European buns, mint, dark jam that has long expired. Smelling is relatively simple.

    Taste Palate: It's bitter, free and floating alcohol gives high irritation to the upper wall of the mouth, jam and wooden frankincense completely surrender, blueberry sauce, tossed apple, fruit pie.

    Finish: Finish, Chinese fragrant, blueberry yam, angelica, cocoa butter substitute, orange peel

    Body: Medium, full of fat, with a bitter bottom, no tannins

    Nose: 82.5 / 100

    Palate: 78/100

    Overall: It's too cut to drink.
