    Quite an interesting and tasty 30-year-old whisky from Highland Park.
    Color: Golden
    I tried whisky with just an open bottle. Score 92-93 (I think if you stand a little bit then there is definitely 93 points)

      It is interesting resinous-oily smell, with notes of fruit with the domination of apple flavor, as well as vanilla and cinnamon.
    • Taste
      92 92
      Fruit taste with a combination of vanilla, apples and peaches. Oily-earthy hue with a pronounced chocolate.
    • Finish
      93 93
      This is where all the magic happens! Very long and warm finish. Taste of tangerine and almonds with a very gentle and pleasant bitterness to which you want to return again. Bravo Highland Park.

    I had the Highland Park 1989 GM last week in the glass, which was at an extremely high level. Therefore today comparing the 88er from CA.

    Beautiful intensive herbs in the nose, alcohol very well integrated. Very pleasant and soft in the mouth at the beginning, then comes a slight bizzling. Very long and warm finish. Very good whisky, but I find the 89er GM a tad better.

    The best Highland Park I’ve tasted so far. There is a great integration of alcohol and perfect balance in flavors; sweet fruits, herbs, spices, maritime and earthy notes and so on. And so on. Fantastic whisky drinking experience.

    Taste Note by Serge:

    In theory… Colour: gold. Nose: it’s much smoother, easier, cake-ier, and perhaps more complex than all the other ones. We’re rather finding fudges, creams, some butterscotch, shortbread, madeleines, herbal teas, chamomile, many nuts (earthy macadamias is obvious), and many flowers. Chamomile again, dandelions, light honeys… It really is an easy, gentle, civilised HP after the flavour-packed young ones. Mouth: ooh this is good! Citrus and medicines, the perfect combo. Lime, camphor, iodine, grapefruits, angelica, wormwood, mint tea, eucalyptus, green and white peppers… And the strength and mouth feel are just perfect. Finish: very long, much more peppery. Huge pepper, paprika, you have to like that. I do. Liquorice wood in the aftertaste, plus some custard to round it off. Comments: something else, clearly, and it’s clearly indy too, that is to say very deviant, in the greatest of ways. Perfect, well done, this is clearly offering ‘an alternative’. That’s how the indies used to introduce themselves… thirty years ago.

      A hint of smoke, delicate citrus notes, subtle aromas of an old and dry oak. A rather reserved appearance. The perceived smoke is like from burnt wooden crests or a match that went out days ago. The longer in the glass, the more open the whisky. No aroma bomb, still a little reserved but a little less shy now. A touch of vanilla very far away. That being said, it is not easy to determine the type of barrel. Now delicate aromas of green apples, a hint of tartness, but unobtrusively but always present the slight smoky note.

      Doesn't look old. A hint of cinnamon for a fleeting moment. dry oak interwoven with fine citrus notes, complemented by a hint of smoke. Fruity aromas of slightly sour apples, some of them already grated. Very subtle, very sophisticated. A lot of time and rest to taste.

      with smoky components, easy onset, somewhat tingly and burning. Fine oak notes, trace of citrus fruits, makes a relatively slim impression. The oak notes are now delicately tart, hardly sweet, trace fruitiness. A little later with a few drops of water: a little more open and fruity, light apple aromas, citrus notes, delicate oak. Now also light sweetness, a hint of honey, a hint of herbaceous, soft, a touch of barrel, fine dry oak, a hint of citrus aromas.

      A little later:
      Slightly sweet with fine notes of dry oak, delicate smoke, apples and citrus. Soft, slightly aromatic and fruity. A touch of barrel and honey, very balanced, now delicately tart with oak, a touch of smoke and ash. So it goes into the finish, stays for a while, gets a little dry and fades after a while.

      Some time later:
      Enjoyed in small sips: sweet with fine oak, a touch of barrel and delicate coffee notes, slightly perfumed, and also a little smoke. Now it tastes best to me.
      It took over an hour to be rewarded with this taste experience. Not decrepit, has power and should be enjoyed without adding water. A completely different Highland Park. Between the original 25 and this one there are worlds of taste. Very sophisticated, very good, very complex and of a subtle nature.

    Boudoir Biscuits

    A Highland Park of 30 years old? That’s not something you come across every day. It was distilled in the year in which yours truly reached the age where it become legal to drink alcohol (not that this stopped me before that, but that’s quite beside the point).

    Ho! This is good! Waxy nose on mango and papaya, almond shavings, banana peel, Granny Smith apples and pebbles on the beach. Some fudge and macadamia nuts. But very much alive for its age, I can tell you. Barely any wood, but all the more fruit and mineral elements, fresh heather and a bit of peat. Chamomile tea, boudoir biscuits and freshly squeezed orange juice. Very good.

    Fine mouthfeel, pretty oily. Mandarin, lime, grapefruit, lots of mint and something medicinal. Nicely peppery. Some earthy notes are upholstered by green herbs, apples and something that reminds me of resin. Excellent!

    The finish is nicely long and again offers some pepper and liquorice. Menthol at the death.

    Wow, this is one of the better Highland Park I have tried.

    • Nose
      Chalky, mineral, fresh fruity, Granny Smith apple. Initially very crispy and lively, and feels very young, but not in a bad way. With time, it is getting milky and creamy, even a little fudgy, and shows its age.
    • Taste
      Slightly sharp, but nicely sour/mineral complexity. Ripe white fruits with a nice integrated peatiness
    • Finish
      Nicely prolonged, and very oily (white nut oils like almonds and macadamia)
