    Well guys first of all: It is not a finish it is a full maturation in a 1st Fill Ex-Pedro Ximenez NOÉ Butt.
    NOÉ? Yes exactly: Bottling of average 30 year old sherry. So you guys have finally a good ex-sherry cask and moaning like: "ooh so pale..."
    Colour does not matter. Have you ever nosed this dram outside of the warehouse 9 (at like 20°C)? It is an actuall sherry bomb.

    So you are asking why it is that pale from 14 years of maturation? PX NOÉ is matured in Criadera y Solera system and according to Bunnahabhain the cask was one of the ones in the system.
    So not that much colour in the whisky.


    So I would bet: If it would have the exact same taste but much darker everyone would be like: What a great sherry dram!
    Do not buy because of the colour - buy because of the taste!

    From a PX NOE butt that had 30yo+ of sherry still inside. The Foz wonders whether the cask had seen any whisky before that. “Noe”, replies Tom.

    N: Toasted barley, slightly mouldy barley, candy, a farmy note,…
    T: Quite a narrow & astringent PX vibe with a delicious mouthfeel however.
    F: Nearly all PX save for a honeyed maltiness.
    C: There’s no drink like it, that I know of. Not quite whisky in my book, but technically it qualifies and it is delicious. Our scores ranged between no score and 86, but I feel I was scoring the quality cask and previous contents much of the time. So, not scored.

    What I think about those people who rate the whisky due to its color, I have already mentioned elsewhere. But again to mention: This is a full maturation in PX NOÉ Butt and no finish.

    There was rarely a dram for me in which the color and the taste are so different *. And I think that's really great - especially because of its uniqueness. It does not exist off the shelf.

    * But wait, there was the completely overdyed Bowmore Black Rock - but that was the exact opposite :)
    • Nose
      Thick musty dusty sherry notes, dried fruits and nuts.
      After adding water, I briefly had a floral note in it, which disappeared quickly. Then more oranges and plums.
    • Taste
      Dried fruits are only clearer, such as dates and raisins. However, the alcohol is a bit too high for me.
      After adding water, I immediately have a gum in it, but also more wood and dark chocolate.
    • Finish
      The gum is quite prominent here, plus a vile PX note with raisins and dark fruits. A pleasant wood / dark chocolate touch remains.

    Tried this one from a bottle my friend brought back from his voyage to Bunnahabhain in 2018! Big thanks to him for letting me try this one!

    Color: Light Gold

    Nose: Super rich spirit-wise and sherry wise, lots of heavy vanillas, oily floral notes, orange oils, lemon rind, yellow plums, raisins, brown sugar, cinnamon stalks and ground ginger along with some light toasted hazelnuts and faint white pepper

    Taste: Very subtle, lots of sea salt, brine, lemon peel, orange fudge, earthiness milk chocolate, pepper, caramalized sugars and almond milk

    Finish: Long and warming with chocolate and orange fudge, yellow plums, sea salt, light pepperiness, raisins and tea leaves

    Such a weirdly light dram from the colour to the taste profile but it keeps a lot of the core older sherry flavours, almost reminiscent of an actual age stated Palo Cortado sherry, but with not as much pure brine and more focus on oily citrus fruits and caramel notes. Personally, I enjoyed the 12 Year Palo Cortado from 2019 a bit more but this one is still a really good whisky that pairs cask and distillate super well.

      Toffee, red apple, peach and pastry.

      Toffee, cocoa, apple, orange and almond. Hazelnut when adding water.
    • Finish
      Toffee, apple and almond.

    Poor and disappointing.
    • Nose
      little dirty on the nose. With time the campfire beach notes start to appear. Sweet vanilla creeping in, notes of a sandy beach with a grassy hill, it's definitely the UK seaside.
    • Taste
      dirty on the arrival, musky and stinky. Sulphur showing, little baby sick, but it is not awful. Salted vanilla, oily enough, creamy enough but the off notes continue. Slightly grassy.
    • Finish
      Vanilla, creamy, little dirty but likeable.
