- Tasting: August 2021
Boiled cabbage and vanilla flowers, mild citrus and a mild, mild smoke.
Sweet smokyness that is mild and a saltiness that is present. Oak wood, flowers and a mild citrus. Peeled oranges and dark chocolate.
With water: Pepper and even more oak tones, sweetness and burnt sugar. A little bitterness from the dark chocolate in good balance.
Long and pleasant. A mild pepper and a sweetness with a certain hint of smokyness. The burnt sugar remains but the sweetness is in balance.
- SMWS Tasting Notes: Charred Chinese leaf with a pinch of sea salt, chilli flakes and a drizzle of hoisin sauce served with stir fry noodles and mussels, made us all very hungry and eager to give it a try. A hot sweet smoke surprised us at first but that soon dissipated and made room for charred oranges with sugared rosemary as well as dark chocolate violet creams. With a drop of water we felt like sitting on a pebble beach cooking a hearty beef and vegetable soup whilst on the palate, we enjoyed bacon s’mores toasted over a peat fire.
