An interesting dram – the nose offered us slate and salted almonds, soft fruits, cake mix, burnt cardboard and salami. On the initial palate the smoke seemed restrained but intensified on the second taste; we also got porridge oats, buttermint sweets, burnt walnut shells, oysters and mussels. The reduced nose combined smoky and maritime – rock-pools, grilled prawns, tea chests, coal dust and salty canvas (like spray-lashed spinnakers or a mermaid’s apron). The palate now held a lick of burnt wood and a combination of sweet and salty – sea salt and caramel pieces in dark chocolate, Horlicks, chocolate-coated nuts and cocoa marble cake.
