Eye / nose
Very bright gold. Not quite white wine but not too far away. Refill Sherry Hogshead? Somehow I would have expected a little more blind, but that does not mean anything. Maybe a fino-bass or something else in this - bright - sherry direction. For the CI convinced in the nose from the first moment. My first reaction describes the Malt actually as comprehensive as accurate: 'YUMMY!'. Point. An extremely elegant freshness emanates from my Mini Glencairn glass. Light sweetness, vegetable, reminiscent of cactus water. If you take a longer and quiet time by the glass, the intensity of the perceived sweetness and the ashen smoke will increase as the temperature of the malts increases. From the cactus water associations becomes agave syrup, if you will. The nose signaled uninhibited, because something very great come, without premature to reveal already too many details. Nuances of dried herbs form the olifaktorische vanguard, to the memory of dried fruits such as apricots and raisins. The fruits are almost volatile in the nose - and soaked in some lubricating oil.
The malt dresses the mouth oily and warms him soon with a sheer unbelievably warmth. A wonderful feeling. Flavors? I note limes, pears, orange zest, almond flakes and green olive paste. Aromas that are as diverse as they are intertwined. All of them are based on a phenolic smoky carpet that is just to be called discreetly. Although the peat smoke has certainly lost its authority over the decades of maturation, it gives the malt a very special, almost unique character in mature form. Fassreifung is just a bit like displacement in engine construction - simply incredibly hard to replace.
Finish / Conclusion
The finish is forever long and warm. The Caol Ila fades away endlessly, like a classical piece of music, which gets quieter towards the end. It does not dry out, and the aromas from the nose and palate change into the oak, then even vegetable-mineral, without any, bothersome bitterness. It forbids itself at all to ponder over possible Fehlnoten. There is no trace of an off-note.
A malt like a Donnerhall. It does not get that much better even under the old Caol Ilas. Our GM bottling offers connoisseurs a remarkable complexity coupled with a healthy dose of traditional distillery character. Very nice!
