Im super impressed by the taste.
    • Nose
      80 80
green fruits, sweet, citric, light peatyness, quite balanced, not so pointy but feels young (but older then it is)
    • Taste
      85 85
more intense peat, nuts, woody, some wet paper, spicy, vanilla
    • Finish
      84 84
      spicy, woody, rather short.

    nose:
fresh fruity, undifferentiated fruit platter, a little grassy, a few stones, almond.
    mouth:
it stings, it tears off, then a little almond again, a little caramelized, woody, a little juicy pear, a floral side arises and spices, and smoke finally, simple, like a veil of smoke at wind that pierces your nostrils
the vanilla then returns with wood and bread crumbs.
finish: short, caramel, vanilla, fresh fruit, some wet wood
very nice ... for a new make.

    Unbalanced

Make no mistake, this is not whisky. This is still spirit. Yet it is named Young Single Malt. Well, as long as it does not say whisky on the label, there is apparently no legal issue. This is younger than three years. It’s a vatting of spirit from ex bourbon, ex red win and ex Islay casks, released by the Milk & Honey Distillery, founded in 2015 in Tel Aviv, Israel.

The nose offers some vanilla, nuts and cardboard. A hint of red fruit and marzipan. An indistinct scent of the farm. Hint of smoke. But it is clear this is not yet fully developed. It is somewhat unbalanced.

The taste is rather flat, tob e honest. The hint of red fruit returns, but there is also some cardboard and wood that makes it quite drying. Some wet earth. They are not offnotes per sé, but the esters do not counter this enough to make it good.

The finish is short on caramel, smoke and wood.

I can taste the promise, but am also a bit worried about the cask selection for this release. They seem to be working against each other instead of going hand in glove, making this a cacophony of tastes.

Remember this is still spirit! It is young, but quite drinkable and has a nice potential to get some really good stuff.

You shouldn't nose and taste this as a whisky.

Sweet, honey, red wine, a bit red port. Vanilla and a touch of marzipan. This is young and it is remarkable on the nose, yet quite a good smell.
After a while some farmy notes pop up.
    • Taste
      86 86
Vanilla, that dirty note as in the nose, some warm spices, red wine influences or port influence if you like. There is a bit of a fresh note in the background.
      The taste is rather mature.
    • Finish
      80 80
Here it shows it isn't whisky yet. A little aggressive, quite some spirity influences and some caramel notes.

I really wanted to like this.

    But......

Age most certainly does matter. This is too young.

I am not convinced that the triple cask does anything more than just confuse the taste. Its a lot of somethings but not much of anything.

I look forward to trying their three year single malt as there is some potential in this.

Very sweet, lot's of vanilla and honey (what's in a name, right?). It's okay, but not very remarkable.
