    I've ranked this Bunnahabhain fairly high into the heavens because this just blows me away. I do hope to see more Palo Cortado cask being used by other distilleries, specifically with other Islay/coastal distilleries. It just goes well with bringing up sea spray salt.
    • Nose
      Dried dark fruits - berries, red/black grapes, sweet yellow skin plum

      Some sherry, minor medicinal notes with floral scent (Orchid and Dandelion)

      Upon further nosing, I identified some bitterness of Japanese Sencha tea.
      Old musky wooden shed like scent.
      Constant oily melted butter throughout the period.
    • Taste
      Sweet fruits and medium ranged dark chocolate (40-60% dark).
      Very rich and spicy cherry compote.
      Minimal peat with limestone like texture coating the mouth.
      Bit of salt at the end.
    • Finish
      Meaty ending as if eating a honey glazed gammon.

      Some berries linger around the mouth.

      Salt remains and a slight tinge of medicinal bitterness comes through. Not too bitter to throw off the balance but a good bit of bitterness. Similar from drinking long brewed aged ripen pu erh tea.

    Though it’s already made it onto Whiskybase, it’s not due to be released until sometime around October.

    N: Sour dairy, some peat and mineral notes.
    T: Dunnage-heavy — moist fungal earth with a fleeting sweetness, vegetal forest floors and cocoa [Kirsty’s official note, spot on].
    F: Becomes sticky sweet, concluding with sweet sherry, mineral and bung cloth.
    C: This is very good. Do I sound surprised? Indeed!
