“With an offer of fine food, strong drinks and plentiful whisky, we were sold on The Spaniard in the West Village of New York City even before we tried their Scotch Cocktails. Owners Mikey McFerran and Mark Gibson have a whisky list that features over 100 selections with Scotch compromising half the menu, and we admire the team’s commitment to guiding both new drinkers and aficionados alike toward bottles that will surprise and delight them.
So, we are pleased to share with you The Spaniard – a bespoke Compass Box Scotch whisky, created with Mikey, in celebration of finding your passion and sharing generously with others.
Just as the team did in the naming the bar, we wanted to generate something memorable, character-driven and a little mysterious. In keeping with the name, basing the recipe around malt whisky aged in former Sherry casks from Spain was a must. These bring deeply complex aromas of sweet dried fruits. We combined these with some vanilla and spice accents from Highland malt whiskies aged in both American oak and Frech oak. We then layered it subtly with a gentle smokiness from a small proportion of Islay malt.
