Today at the first birthday of my son it was time to open it up again. It will be an annual tradition since the day he was born, until he is old enough to drink the last few drams with me. Until that time: one annual dram a year for daddy. It means I will have to nurture this Bottle for 17 more years. Which means pour it over to smaller bottles regularly to minimize oxidation influence.
Oh and whisky-wise: Fantasic stuff! It’s not incredibly complex, it’s rather straight forward: this one is all about sherry. But man..in an very impressive way!
    • Nose
This has written PX sherry bomb allover it! This is such a sophisticated nose! Warm red fruits and canned tropical fruit punch. Also it’s very sweet. Loads of raisins! There is also a very sweet white wine smell to it. That very sweet Muscat wine that is used as an apperative. There is a slight alcoholic sting. Splendid nose!
    • Taste
Incredible sweet, full flavoured and very mature! This definitely appears older then it is. The balance is fantastic. Mouthfeel is gentle and soft. Red fruits dominate the palate together with intense dried herbs and also raisins. There is even a slight grassy note to it. Absolutely no water is needed to get this to drinkable levels. Alcohol is very well integrated. Water does stoften it up even more and it gives room for a creamy, silky body with wood influences.
    • Finish
Oh this is sticky stuff! And glad to it! Very long finish! It is a deserving finish for an even more splendid whisky! Again red fruits and herbs but more delicate herbs then in the taste. With water more dried wood joins in. It all finishes up in a very smooth, silky mouthcovering experience.

It’s going to be quite challenging to wait for next years annual dram time when my little mate turns 2.

Good savory sherry notes. There is a bit of the nose of these crystals which stay in the cask after emptying.
Also some damp cellar, but overall a very good mature sherry nose!

Full sherry blast. This is a bomb, but it is very pleasing. There are quite a bit of red fruit, forrest fruit and all these notes which you can expect in here. I like this quite a bit. Don't put much water though!

Long length. Again a lot of red fruit, almost none tannines which is rare. This keeps on rolling!

I had a chance to try this one H2H with the slightly younger oloroso in the visitors center (end of June) In my opinion there are 2 things possible: or the oloroso is not mature enough to bottle yet, or this older PX is just blowing the oloroso away with hurricane wind speeds. I’m in for the last option. It is one big fat bodied sherry nose with a beautiful creamy body. Loads of red fruits and nuttiness. Filling a bottle was an absolute no brainer and so I did. I’m not opening this one until the birth of my first child end of August. By then i will try to do the tasting note.

This bottling was 10 year in a first fill bourbon and another 6 year in a Pedro Ximenez cask.
