Whisky Reviews for Aultmore 1997 CA

[October, 2018] Aultmore is one of these distilleries that produces for blends almost exclusively what makes it hard to get any decent single malt release (beside the completely overpriced Diageo special releases). That is why I always welcome a bottling like this because it provides the opportunity to taste this rather unknown malt without preconcepations…

...and this is a fine malt, actually! It is completely old style distillate-driven with a delicious fruity-toffee-honey-marzipan profile that is both impressive and flawless. It is dangerously quaffable to me (but maybe not to everybody, I can imagine) but to be honest: I do not care...
    • Nose
      90 90
The nose offers an adorable bold toffee-marzipan profile with fine fruits, honeys and spices that complement the vanilla-driven aromas to an interesting and balanced mix. No off-note that I can smell - I really like this nose, for sure! It is truly old-stylish and reminds me a little bit of the lush and impressive drams of the early seventies, not joking...
    • Taste
      91 91
The taste is very sweet on over-ripe fruits, toffee, vanilla and fat oily (nuts oils) flavours complements by fine spices and wooden notes that create an interesting to explore and tasty experience. It is bold and thick so I have have to chew it before swallowing it (that is what your reflexes will tell you). A great mouthfeel and delicious taste, no doubt! Water turns the taste smoother and releases more aromas in the nose and flavours on the palate - actually I like it both neat (because of its sheer power) and reduced to about 46% abv (because of the added complexity).
    • Finish
      90 90
The initial mouthfeel is warming and charming and instantly coats the whole of the mouth with a pleasant creamy feeling and not a distracting moment whatsoever. The finish is long, again greatly chewable and adds more spices that are very welcomed to counter-balance the enormous sweetness of the taste. This was bottled exactly at the right time - another perfect warehouse tasting experience (thanks, Cadenhead!)...

Super fruity malt, tastes very good to me personally. The somewhat boorish development of alcohol and the very restrained bitterness would make me conclude something quite young.

Notes from a blind tasting. (on the wing)

Yes, that's how you can be wrong. I've poured a glass again and lo and behold, if you look for them, you will also find the oak, quite clearly even. I liked him before, but that makes him even better!
    • Nose
      89 89
Green and red apples, ripe, that's the first thing that comes to you after pouring. After a while, a pleasant muffle is added, the green apples are gone and the red frost on the dot. Serve with peach juice and a dash of lemon. I also like a little vanilla. It warms increasingly sweeter, the fruits fade.
    • Taste
      87 87
Relatively tingling in the start, fruity ahead, followed by honey, little bitterness that comes late. In the second sip significantly more spice and also a bit bitter. Acts a bit gruff.
    • Finish
      86 86
A medium-long fading in which the fruits no longer occur and honey and tart notes disappear at the same time. At the second sip, the bittern notes stay much longer.
