    Often with these peated and sherried malts, I find myself looking for balance and not finding it. In most cases the peat is completely overwhelming the sherried side, with much aeration needed to reveal those notes. The cask on this Ballechin did a wonderful job in taming the peat without crossing borders. So, good balance between the two main components but still a pretty extreme malt. Slap an Islay label on it and people would believe it right away. Good job on bottling this one at the right age, Van Wees team (Viva Hollandia!), and excellent cask management, Edradour. I have yet to experience sulphur in their sherried bottlings and that's a good sign.
    • Nose
      A prickly nose, where sherry and peat fight each other for a place in the front row. Aggressive! Earthy peat, ash, moss, bonfire smoke, brine, soot and bacon compile the smokey side. This fades to make place for fruits and sweetness from the sherry cask. Not much variation but evident are strawberry, apple, orange peel and grilled pineapple. Dark chocolate, cream sherry, molasses, cinnamon and lots of butterscotch follow. Digging deeper we find malt, hay, salt, pepper, lavender, vanilla, cashew and roast peanut. Some notes of varnish and beer as well, seems typical of Edradour. Does exactly what it promises with its combo of peat and sherry. And it does that well. Has something rummy and so far, pretty yummy!
    • Taste
      Good peat/sherry balance again. Sharp attack from the peat and deep sherry notes follow. Second fill you said? Fairly dry and earthy with ash, smoke, salt, pepper, crispy bacon and a variety of smoked meat. Orange peel, citrus, strawberry and grapefruit deliver the (subtle) fruitiness with PX sherry, graham cracker, custard, toffee, salted caramel and chocolate sauce for an intense dose of sweetness. Further on malty/grainy notes, dark honey, sour cream, tobacco, leather, pistacchio, espresso and menthol. A little umami twist as well with balsamic vinegar, sweet bbq sauce and varnish. A pretty kick in the teeth with the assault of smoke and sweetness. Everything is built around the peat and smoke, making it less complex than the nose. Could be the relative youth but then again this is not a malt if you're looking for refinement. I like it.

      Finish is medium to long, with chocolate, sultana, malty notes and smoke.

    sherry influence is quite all right, some dark fruits, some grapes, some sweet dried apricots. the peat is quite dominating, only a few spices, a bit too much ABV, some drops of water are fine. Rather short fruity finish and a longer lasting peaty finish. Fine dram, not overly complex

    With a little water the malt becomes fresher and a bit more sherry-toned in the nose. On the palate, it is also a touch of fruity, the smoke-ash-sherry-fruit-flavor game is, as well as in the finish, milder and yet present. I like something better than the pure version.

    If you like grilled meat of the darker variety, then this is the place to go. The sherry aromas are first in the background, the fruitiness is initially back. An original, extreme malt. Selchrauchliebhaben be awarded more points, subtle lovers of fine filigree flavors still deduct one or the other point.
    • Nose
      Smoked meat, bacon. Speck plum roasted over the flame, wrapped in bacon, a small piece of smoked mountain cheese stuck in the middle of the plum. Sherry. Mint freshness. Mossy forest floor.
    • Taste
      The full smoker and grill program comes in the mouth. Very spicy. Intensely intense, the bacon plum with Bergräucherkäsekern is now a little angekokelt. Sherry again. Smoke, ashes and bacon plums alternate with each other in waves.
    • Finish
      The spicy taste of sherry and scorched bacon plum stays long. I did not have that either. Intensively original.
