Nose: The aroma starts with notes of a fragrant spice cupboard, creamy custard (creme brulee) and freshly baked date scones, building to a delicate thread of tropical fruit and a gentle note of peat-smoked barley. With water added, there is a sweet note of vanilla pods, followed by white chocolate and borage honey.
Palate: Without any water, this is a big, big dram - weighty with oily and creamy textures, carrying flavours of mixed spice, summer-berry fruit-compote all carried by a whiff of soft peat smoke. With water, the spice and peat flavours mingle and mellow, bringing out a moreish, drying quality from the wood.
Finish: Long and lingering, the spices remain dominant, with a malty, chocolatey flavor remaining.
