    Youthful and vibrant. 
    • Nose
      Quite floral to begin, with developing notes of lavender and fresh shoe leather.Continuing into lemon meringue   pie with lime zest and ginger. 
    • Taste
      Ginger and lime marmalade  , lavender honey and a smoked biltong element. Some peppery spice towards the mid-palate.
    • Finish
      Dry and spicy. The tongue tingles along the sides as a soft smoke spreads.

    N: We are at the Butchers! I’ve never nosed such a meaty dram, raw and poor/processed meats at that. Interesting that the SMWS tasting panel went for fish on the nose. I got turkey slices, maple ham, meats>cheeses - all slightly sweaty - meaty-stuffed [large] olives, canvas tents,...  
    T: A strong robust spirit presented with pickled onion/sage stuffing meats, vinegary meaty>peat,….A unique meaty doughy dryness ensues, like a smoky processed meat Wellington if you will.
    F: More highly processed meat slices: smoked ham>turkey=chicken.
    C: Unique, memorable, particular. Ideal food-pairing whisky. obviouslyScores a B[+]

    PeatedMaple peat-smoked bacon doughnut

    A sweet creamy aroma at first of tarragon linguine with peat smoked scallops seasoned with rock salt before an oily scent arrived of preparing Spanish sardines on toast. First by heating olive oil in a frying pan, then sizzling garlic clove and red chilli and finally adding the sardines with a squeeze of lemon juice. The taste was a revelation – maple peat smoked bacon doughnuts (they exist now!), add to that crystallised fruits, honeycomb and liquorice all wrapped in smoke. Water added smoked steamed syrup sponge pudding and on the palate a sour cherry Caipirinha with peekaboo Battenberg cake and, just in case it was not mentioned before, Smoke!
