    nose
An incredibly complex nose. The age here delivers exactly what I would expect. Soft and gentle, but still strong in aroma. The alcohol is perfectly integrated. The typical great sherry aromas dominate, dark cane sugar, rhum raisins, candied dried plums, overripe bananas, mango and a large load of freshly polished leather. Marzipan coated in black chocolate. Sweet and tart notes alternate, some oak, some oriental spices, then the cane sugar again. Simply great, I can smell this dram for hours. Finally fried bananas, I rarely have that ...

    taste
Furthermore extremely soft, creamy, gentle and yet with a great taste. Not watery or boring, on the contrary, only the alcohol is simply perfectly integrated and does not sting or burn at all. The aromas from the nose drag on into the taste, the leather and the tropical fruits dominate. There is a little more spice, a slight bitterness and a little oak, but then again the overripe bananas and fruits and also the sherry aromas with the raisins and dried plums and plums. Cinnamon and caramel are added, and some orange jam. Towards the finish, a light note of pepper on the edge of the tongue, which lets the taste explode again in the mouth.

    Exit
Seamless transition from the taste, with a medium-long persistence of slightly bitter sherry, cinnamon, leather and dark chocolate. Light pepper on the edge of the tongue, light tickling on the palate. It would be nice if the finish stayed a lot longer ...

    Conclusion
One paints with pleasure from A to Z, close to perfect drinking pleasure and not for nothing the best malt I have been allowed to drink so far. A dream that I will miss very much when my bottle is empty.

    N-96, T-96, F-95 for excellent 96 points.

Matured in a white Rioja cask, this expression offers a big, fragrant, sweet
nose, and is full bodied in the mouth. Fruity, with toffee apples, and the fruit
lingers right to the end. This whisky is a single cask limited edition with an
out turn of just 328 bottles, with natural colour and unchill filtered.

serge In case you don’t know, white Rioja is made in Spain out of macabeo and
sometimes malvasia, and is a dry wine but with low acidity. This is a
full-maturing, no finishing or ACE. Colour: full gold. Nose: wow, this is
extremely aromatic and concentrated like an ice wine. Yet, it’s superbly fresh
and clean. Very rich and compact, presenting three main aromas at the same time:
fruits, flowers and caramel. Yes, lots of dried oranges, apricot liqueur, quince
jelly, overripe mirabelle plum, nectar, yellow flowers, pollen, light honey,
caramel crème… it’s endless and marvellously balanced. Something of a late
harvest Alsatian tokay-pinot gris… Ah, and some beautiful notes of ripe
strawberries and a whiffs of beeswax… Sumptuous! (For my own references, I added
‘blend of 1972 Clynelish and 1970 Balvenie’). Mouth: silky again, sweet, creamy,
fruity and waxy, rounded but rather nervous… And also a little oaky and peppery
(white pepper). Probably a little less explosive than the nose but still
beautiful. Lots of pear and apricot jams with cinnamon, vanilla beans, quince
jelly, bitter chocolate, getting quite gingery after a moment (some wood
indeed). The weaker part is probably the finish that’s a little metallic and not
extremely long, but quite unexpectedly not drying at all. Anyway, I’m
nitpicking, it’s a fabulous malt altogether:
