Perhaps the long finishing period was to make up for a poor cask. The off note holds on no matter how much time you give or how much water you add.
Monkey’s Blood, strawberry sauce that is (perhaps only Brits get this one). Big berry notes, raspberries, blackberries and brambles. Quite some tannings coming from the wine cask, perhaps even the faintest hint of smoke. Also an off note just lingering in there.
With water a toasted nuts note makes an appearance but in the downside the off note gains momentum.
Big and spicy arrival, a lot of power in this one. Haribo cherry sweets with a touch of marzipan. The off note is present in the palate, a lot more prominent than the nose, I would call it “cask stank”.
Dry with lots of tannings, someone left the teabag in the cup.
With water the finish softens and gains a little jello sweetness.
