    [November, 2018] Another one of these wonderous 4th fill casks that are able to deliver exceptional drams like no first fill or refill cask can ever do (for more on this subject refer to my review on WB id 117033). Very interesting that most people shy away from buying such 4th fill releases and I wonder if this is because they mistake a 4th fill with an exhausted (leached) cask or because they already adapted to the modern "punchy" whisky style that rather goes for a few extreme spikes (like massive sherry or heavy peats or aggressive woods) instead of the old Traditional Scotch style of a delicate, balanced and complex flavours profile. But I do not complain because their caution leaves more choices for me...

    ...and this choice was another good but not an excellent one! This 1999 is a fine and delicate 4th fill maturation that is more "modern-stylish" than the lush old-style profile of my favourite 1998 Summer 2018 release - but to be honest: I prefer many other The Family Casks vintages over this one...

    [June, 2019] I re-tasted this dram and I find the nose even less impressive but the taste is delicious if you quaff larger measures (it takes a little to adopt to this rather unusual profile). Tonight I find a minor sulphurous note in both nose and taste but this is very shy and not really annoying (like sulphured raisins). By the way, this dram is dimensions better than the Macallan Edition No. 3 (WB id 101751) I had before...

    [October, 2019] Another re-taste and tonight the sulphurous notes are stronger both in the nose and taste, still bearable but nevertheless unpleasant. I lowered my rating by two points...

      The colour is burnished and the nose offers a subtle Fino sherry profile (herbs, spices, waxes, shy fruits) with fine malty and wooden aromas in a nice balance. No obvious off-notes (sometimes I get of whiff of sulphur but next time this is gone so it is no big deal) but the nose stays very shy even after significant breathing time and adding some water, unfortunately...

      The taste is layered and complex on a Fino sherry profile with herbs, spices, honeys, waxes, oils and quite some chalk. The fruits join later as do the chocolatey flavours and all create a complex and balanced impression. Water turns both the mouthfeel and finish less drying-astringent but the sulphur grows in the nose - I prefer this dram reduced to about 45% abv.

      The initial mouthfeel is warming but not very much coating and with a minor bitter-astringent feeling (sulphur). The finish is long and more spicy (chili, white peppers) than the taste with an interesting chocolatey flash at the end. It gets a little drying-astringent (metals, sulphur) towards the end that is somewhat distracting.

      Candle smoke. Flourish apples. A touch of methane gas. Behind them freshly peeled mandarins and a hint of cinnamon. Gingerbread.

      Sweet red apples, white pepper. Pancakes, candied ginger, some orange peel. To the end violets and a hint of lavender.
