- Nose is high on alcohol, sweet, winey and somewhat "oloroso" nutty. Yes, I know it is a claret cask … The nuttiness follows through in taste, then becomes dry like an amontillado. Some pepper and red chillis remain in the throat for a long and medium pleasant finish.
Somehow this dram has gone down a dry sherry road whereas I was hoping for the wine …
Water brings out more wine and sweetness and makes the dram a tad more enjoyable to me, more full and creamy, still not too many dimensions in taste.
In general, I start to worry about cask selection looking at the last handful or so releases.
ham, meatballs, red wood, dark fruits, smoke, salt, iodine, light butter, leather tanner, cheese, damp foliage, whiff of black vinegar
rich wine, deep dark red fruits, rancio, barbecued pork, red wood aroma
long, rich red wine, very spicy, dry, salted meat, dried ham, cheese, herbs, vegetal, grains
- it’s like having an outdoor barbecue with a cornucopia of meat and fine wine. rich, complex and never falls short except with the bottle size and price
