A craft distillery just outside of Taipei City. The owner, master distiller, barrel manager, master blender, etc..., Alex Chang, is friendly and knowledgeable. He's also willing to experiment. Where other Taiwanese distilleries prefer formulaic distillation of set products, Holy Distillery is willing to venture into new territory. With their pot-still and column-still combination, they've been able to make corn, sorghum, and rice whiskies, rum, beer distillate, single malt, and plum liqueur. It may not be the biggest or fanciest distillery, but it is unique and well worth a visit. Tours are available, but they generally recommend that you give a week's notice to guarantee someone is available to lead your tour.
