Some innovations happening in Irish Whiskey as of early 2021:

- Wood and cask finishes still continues - For those who don't know, compared to scotch and bourbon, Irish whiskey doesn't need to mature in oak. 

- Yeast - Some distilleries have experimented/are experimenting on different yeasts for fermentation. This allows the distillers to impart more flavour to their distillates than just using normal distillers yeast.

- Peated - Yes, gone are the days of Connemara being the only peated Irish whiskey in the market. Lot's of young peated whiskey (and poitin) coming out.

- Mashbill - Whiskey historian and thought-leader in Irish whiskey, Fionnan O'connor, has been working in reviving Irish whiskey mashbills from as far back as 1800s. An interesting and exciting work for his PhD that would hopefully open the floodgates further in this renaissance of Irish whiskey.
