Color
Burnished
Nose
Chocolate and cream, then a blast of pure Atlantic ozone with a big
plate of seafood and the shells drying in the sun. There's a bit of
lemon zest too.
Taste
Big coalsmoke on the palate. Really sooty with heavily sugared lemons and a dusting of cocoa.
Finish
Relentless, intense waves of salt and spice crashing on the palate.
Comments
Who says the location of the maturation doesn't matter? These FI casks
are amongst very few that are matured at the distillery and they are
just stunning. Also, if CI was matured in sherry wood more often it
would develop a real cult following (no that's not a spelling mistake).
It's better to have drunk it all than never to have drunk at all.

The sherry is nicely integrated with the peat and the result is a well balanced Caol Ila, quite smooth. On the other hand, the peat is somewhat contained and maybe a bit too docile. I preferred the "At the distillery bottling", more expressive

Pale gold
Nose
Powerful. Sea spray, smoke from a peat fire and fresh with concentrated lemon extract. Lovely.
Taste
Powerful and very peaty with lots of black pepper and liquorice. Ripe and sweet citrus fruits in the background. Really nice taste for a peat-maniac like me.
Finish
Long, peaty and dry. Lemon zest. Coats the tongue and becomes slightly ashy.
